The story
Vietnamese bakers arrived in Australia in the 1980s, carrying the French baguette and their own traditions into new communities. They baked through the early hours so their neighbours could eat well. That's the spirit behind every banh mi we make.
No shortcuts. No compromises. Just the same craft that's been feeding people for decades.
The craft
Bread that doesn't get eaten the same day isn't bread worth eating.
Everything is made in-house — the pate, the pickled daikon, the chilli sauce, the pork filling. We don't open a bag. We don't take a shortcut. The baguette is baked fresh in the morning and it shows.
